Dietary Managers are professional food service managers who supervise and oversee the dietetic services area in long-term care facilities, clinics, hospitals, schools, nursing homes, correctional facilities and other noncommercial food service settings. Dietary Managers are trained in understanding the basic nutritional needs of their clientele, and they work in partnership with registered dietitians. Courses are part of the A.A.S. in Culinary Management and the program is accredited by the Association of Nutrition and Foodservice Professionals. Graduates qualify to take the credentialing exam for CDM/CFPP certification. The program requires a field experience component coordinated under the direction of a CDM/CFPP or DTR, with a Registered Dietitian.
